FAST YEAST BREAD

And now something from my wife. We use this bread for communion. She makes this beautiful round loaves of bread with a cross cut into the top.

"Fast Yeast Bread"

4 - 4 1/2 cups flour
1 pkg (or 1 TBSP) active dry yeast
1 1/4 cups milk
1/4 cup margarine (or butter)
2 TBSP. sugar (not sugar substitute)
1/2 tsp. salt
1 egg

In saucepan, heat milk, margarine and sugar just until margarine/butter melts. In large mixing bowl, add 2 cups flour, salt and yeast. When milk mixture is ready, add it to flour/yeast mix. Stir well with wooden spoon. Then, add egg and beat to mix thoroughly (use dough hooks on mixer, if available). Stir in remaining flour to get a stiff, not too sticky dough.

Divide into halves or quarters. Lightly grease pan for baking, shape dough as desired, cover and let rise for 30-45 min. in draft free area. Makes excellent dinner rolls, pizza dough (a bit sweet) or braided bread. Bake at 350 degrees for about 25-30 minutes. For a golden crust, lightly brush top of bread/rolls with eggwash (lighly beat 1 egg with 1 TBSP water) before baking.
